3 large egg yolks

Pinch of salt

Pinch of cayenne pepper

2 tbsp fresh lemon juice

115g unsalted butter

In a blender, combine the egg yolks , lemon juice and seasoning. Cover and blend for about 15 seconds.

Place the butter in a measuring jug. Heat it in the microwave for about 1 minute, or until completely melted and hot. Set the blender on high speed and pour the butter into the egg yolk mixture in a thin stream. Start pouring very slowly at first. It should thicken almost immediately. Keep the sauce warm until serving by sitting the bowl in a pan of hot (not boiling) water.
