A little something for you
Here are some great Kiwi recipes I think complement the wines well. Enjoy.
GARLIC PRAWN AND PARSLEY SPAGHETTI
Perfect with chilled Little Beauty Sauvignon Blanc
Serves 4
INGREDIENTS
- 500 grams fresh king prawns
- Spaghetti (enough for 4 serves)
- 1/2 cup olive oil
- 6 cloves of garlic, roughly chopped
- 1 teaspoon of chilli flakes
- Bunch of fresh parsley, finely chopped
- 2 spring onions, finely chopped
- Juice of 1-2 lemons
- 1 cup grated parmesan cheese
- Black pepper for seasoning
METHOD
Bring a large saucepan of water to the boil. Add a splash of olive oil. Cook pasta until al dente.
In a pan, pour in half a cup of olive oil, add chopped garlic, chilli flakes and parsley. Cook gently for 2-3 minutes, being careful not to brown the garlic. Set aside.
Pat prawns dry with paper towels, removing any excess moisture. Heat pan to med-high. Cook prawns, turning until pink (about 3-4 minutes). Be careful not to over crowd the pan. Set aside.
Drain pasta, add remaining olive oil to pasta, toss in all other ingredients, add lemon juice and black pepper. Garnish with grated parmesan and spring onions.
Serve with a fresh garden green salad and Little Beauty Sauvignon Blanc.
