MY CREDENTIALS


Pinot Gris

Vintage: 2014. Limited Edition.
Colour: Pale rim graduating to a pale straw core.  Shows some viscosity (concentration).
Aroma: Oozing delightful aromatics and freshness.  Sun-blush apricot, black jelly bean, nougat.  Hints of floral such as jasmine or appled blossom.
Palate: The palate is lively.  Apricot kernel, hints of papaya and spice. There’s a mealy component – which adds complexity.  Completely moreish.

VITICULTURE

Terroir: Soil: free draining, fine sandy, silt loam over alluvial gravels.
Canopy Management Regime: Vertical Shoot Positioning, North-South Facing rows. Two cane pruning regime.
Harvest Method: Hand harvested only when showing physiological ripeness. The bins were loaded into a tank press and whole bunch pressed to avoid extracting the natural phenolics the variety carries.

OENOLOGY

Fermentation: The free run juice was enzyme settled before being racked to ferment in a stainless steel tank and inoculated with Elegance yeast. A cool ferment retained the subtle varietal characters and improves finesse and delicacy. The wine sits on fine lees in a tank for a few months before bottling.
Residual Sugar: 6.7 g/l
Alcohol Content: 13.5%
Titratable Acid: 5.2 g/l

Органолептика


Пино Гри

Цвет: Светлое вино чистого соломенно-желтого цвета.
Букет: В букете преобладают утонченные и свежие ароматные тона тропических фруктов (мандарин, айва) с нотками стручков ванили и пряностей и легкими оттенками лакрицы.
Вкус: Яркий, сочный, почти сладкий вкус несмотря на низкий уровень остаточного сахара. В завершение Вашего удивительного путешествия Пино Гри раскрывается нотами ирисок и спелых абрикосов.

Технология и терруар

Место произрастания: Единый виноградник
Терруар: Почвы песчаные, с естественным водоотводом, местами наносы ила поверх речной гальки. Вертикальная формировка винограда, шпалеры обращены строго по направлению с севера на юг. Обрезка по кордонной системе в два яруса.

Сбор винограда: Собирается исключительно вручную строго после созревания. Отжим происходит в баках без отделения гребней, чтобы избежать выделения фенольных кислот, которые содержатся в данном сорте винограда.

Технология

Ферментация: сок стекает самостоятельно, без отжима. Фермент добавляется в сусло до того, как оно будет разлито в емкости из нержавеющей стали для ферментации. Процесс холодной ферментации обеспечивает сохранение натуральных свойств данного сорта винограда и его тонких вкусовых качеств. За несколько месяцев до разлива вина по бутылкам выпадает осадок.

Сочетаемость

Отлично сочетается с блюдами, приготовленными с перцем Чили или соусом сатэй. Например, курица сатэй. Благодаря своему изысканному вкусу хорошо сочетается с крабами и омарами.

Рекомендуется подавать лишь слегка охлажденным.
